Fresh Cheese Boards

Thanksgiving will be here next week; and whether you are hosting the dinner or coming as a guest, everyone has their part. I find the appetizers very challenging. You will want something special but not too filling. I suggest a cheese board, but not just any cheese board. Fill it with exciting items your family will love.
First find a nice platter to display your goodies. I have used a wooden board, a pretty platter, or get something that matches your thanksgiving table.
For the cheeses there are never-ending choices. I would suggest at least one type of brie. Maybe a blue, Point Reyes is a great brand. Buffalo mozzarella and smoked cheddar or Gouda. Look for a strong hard cheese that will do nicely.
Sliced apples, pears and persimmons go great with all types of cheeses. When shopping, look down the cracker aisle and choose your favorite. Then add some you have never tried: all types and sizes. A sourdough baguette, sliced or whole, adds to your fresh board.

Next, find bright colored peppers, some roasted and some fresh. Add cucumbers and arugula for your greens . Marinated mushrooms or veggies add a nice touch, and if you like hot add hot peppers. I also love dried apricots and figs.
No plate would be finished without some cured meat. Prosciutto, Capicola, and good salami. When I lived in Alaska we used smoked salmon and maybe dried moose.
Just get creative there is no right or wrong. Have fun with it!
